Since 1936, Azienda Agricola Olearia Giovani boasts a long tradition of dedication and passion in
the production of Extra Virgin Olive Oil. Such experience let produce an excellent oil, appreciated
by many consumers. The centuries-old olive groves are located on the hills, while other more
recently planted ones are on the slopes adjacent to the hills.
The cultivation work is carried out respecting both the plants and the environment; in fact, pruning
is done manually every year, and fertilization is organic.
The olive harvest begins at the moment of veraison (early ripening) of the fruit, and the oil is
immediately extracted using a mechanical pressing system. In this way, we obtain a superior-quality
oil, rich in flavour and vitamins, with a high content of antioxidant (polyphenol).
Giovani’s Extra Virgin Olive Oil is green tending to yellow, it has a moderately fruity and very
fragrant taste, with a sweet flavor slightly pungent that leaves a pleasant aromatic persistence on the
palate.
The plantations consist of the following cultivars: 50% Frantoio, 30% Moraiolo, 10% Leccino, and
10% pollinators (Pendolino, Maurino, etc.).
Additionally, this Extra Virgin Olive Oil benefits from an extra guarantee for the consumer, as it is
certified with the Tuscany P.G.I. (Protected Geographical Indication) mark.

Giovani Olive Mill is located in Tuscany, between the silvery green of the olive groves and the
vineyards of Val di Cornia, in San Lorenzo area (Municipality of Suvereto, LI).
